The ground floor runs a slick service that reflects Swift’s name, focusing on aperitifs such as Martinis and oysters. The Downstairs Bar is designed for lingering a little longer, with art-deco booths, table service, a world class whisky list and live music, courtesy of their piano.

Hope & Sesame, opened in March 2016, is tucked away behind a traditional Cantonese store in the quaint neighbourhoods of DongshanKou, the heart of the old Guangzhou. The bar is a unique testing ground for cocktail and innovation. Behind a secret door within Hope & Sesame is “The Jazz Room”, a salon with passionate jazz players congregating nightly to perform lively tunes, it is a true sanctuary for live music enthusiasts. A group of 8-12 local and foreigners musicians varying style and ensuring each night there is consistency and yet diversity.

Boadas Cocktails is a very old cocktail bar in the main center of Barcelona. Boadas was open in 1933 by Miguel Boadas (the pupil of Constante Ribalaigua at “El Floridita” in Cuba in the early 20’s) Miguel and his daughter, Maria Dolores Boadas, and now Jeronimo, worked together for 87 years to keep alive the soul of American Bars and the spirit of the authentic cocktails. Full of history and beloved by writers, painters and poets... our guests “The Boaditas” always come to visit us from around the globe and of course mostly our locals to enjoy the experience of crossing doors and make a trip back to better times at the 30’s or the 40’s...

Sitting on B1 in the underground secret corridors of Raffles London is The Spy Bar. This subterranean surreptitious space is a cocktail bar like none other. Deeply atmospheric with a hint of the illicit, The Spy Bar pays homage to the plethora of spies whose secrets were guarded by the walls of The OWO. Situated in two former rooms that were numbered 006 and 007 in the early 20th century and functioned as high-security storage vaults for identity papers and mission reports of MI5 and MI6 agents. Today the bar is reminiscent of the late-night drinks consumed, cloak-and-dagger moments, secret forms of communication and martini-hour rendezvous.

The cultural mix of the time brought newness, dynamism to Buenos Aires and created a veritable melting pot of bars and drinks. The Floreria Atlantico is in line with this golden age of Buenos Aires. You can drink alcohol from around the world: Cocktails are unusual mixtures, cultural mirrors of the mixing of the past century. Last but not least Floreria Atlantico is in the neighbourhood of Retiro and the bar is hidden below a flower and wine shop.

In Athens, not far from the Acropolis, The Bar in Front of the Bar stands out as a small cocktail haven, promising a distinctive experience in the city’s vibrant bar scene. Founded in 2022 by three industry veterans—Alexandros Tselepis, Konstantinos Theodorakopoulos, and Simeon Papanikolaou—the bar quickly became an icon in Athens' cocktail community. The innovative concept, reflected in its name, challenges convention by placing a street-level bar directly in front of its own speakeasy. Originally intended as a pop-up during the speakeasy's construction, its unexpected popularity led the team to make it a permanent fixture, and the main bar.

The classic design with the dark wood, red velvet and William Morris wallpaper is a tribute to all the classic bars that have made history in the cocktail scene all over the globe. The caption to the bar is "classic, contemporary, modern" a hint to the art dealing vocabulary and an insight into how to read cocktails and contextualize them.

The Netherlands bartenders Tess Posthumus and Timo Janse recently opened their first
cocktail bar, Flying Dutchmen Cocktails. The location was found in the Odeon, a national Dutch monument at Singel 460 in the heart of Amsterdam. Flying Dutchmen Cocktails focusses on (neo-)classic cocktails, drinks education and the creation of a true cocktail culture in the Netherlands. Flying Dutchmen teaches their guests and the bar industry something about bartending, about the stories behind the spirits, about existing recipes and about the bartenders who created these classic cocktails.

Advance mixology methods are used to extract flavors from seeds to leaves and nose to tail in creating each one of the kind signatures cocktails. Banana plays with time, a cocktail that combines the flavors of each stage of the banana from raw to ripe, while Cow is a cocktail that uses the by-product of the animal such as beef fat as well as milk, butter and cheese to create an unbelievably savory and round flavor.

The Jerry Thomas Speakeasy arises from the idea of bringing back to light a forgotten classic mixing style. In 2010 a group of bartenders decided to open a small club in the heart of Rome in which colleagues, spirit afficianados, the curious and industry representatives could meet and share their expertise and knowledge. This was actually the first “secret bar” in Italy. After eight years, the “Jerry” is still a reference for the bartending industry in the region by seeking, sharing and spreading its knowledge within the Italian industry.
